Wagyu Ramen Kiwami is a specialty beef-bone ramen shop whose signature is a paitan (rich, milky broth) simmered from 100% beef bones, using no chicken or pork, so it is deep and full-bodied yet finishes smooth and mellow. In a single bowl you can compare three kinds of wagyu chashu prepared by different methods and from different cuts, one seared, one cooked at low temperature, and one braised, and they cling nicely to the thin, straight noodles. The wagyu ramen is 1,350 yen. Located a few minutes on foot from Shibuya Station in a building along Miyamasu-zaka, the shop has counter and table seating and welcomes families.
